Vegan Kotlet Schabowy Recipe – Polish Vegan Cutlet

If you ask any Pole about their traditional meals, the first thing that they will talk about is rosol and schabowy served up with mashed potatoes. Traditionally the schabowy recipe is made using pork. This schabowy recipe however is a vegan alternative that is made using chickpeas. You will find that it has a different texture to meat but the crunch that you get from the breaded cutlets is still very much the same. The seasoning used adds to the flavor a lot. Make sure that you use the correct seasoning though. The seasoning should be chicken or meat like and use vegetable ingredients. 

The most important part of this recipe is making sure that the chickpea mixture for the Polish vegan cutlet is the right consistency. It should not be too runny because it won’t hold shape. It shouldn’t be too sticky either. The flour helps make the mixture more dough-like. The trick is to add a little flour at a time till you get the right consistency. The first time you try this, you may take a bit of time to get it right but over time it will become second nature.

Part I – Peel And Finely Dice And Onion

Part II – Blend The Chickpeas

In a blender add 400 gms. of cooked chickpeas, the diced onion, 3 tbsps. of chicken like (plant based) seasoning, 2 tbsps. of oil and 10 tbsps. of all purpose flour. Blend it together. This will form a smooth paste. 

Part III – Check The Mixture

Once you’ve blended the chickpeas, check the mixture. It should not be liquid or sticky. If it is, add in more flour. Use your hands to incorporate it in. You can knead it like dough.

Part IV – Form The Polish Vegan Cutlets

Form the cutlets using your hands. You can make them in the size and shape that you like. These cutlets will hold their shape easily so making them is quick. 

Part V – Coat The Cutlets With Breadcrumbs

Use a plate and pour some breadcrumbs on it. Coat the Polish vegan cutlets with bread crumbs. Do this gently so that you don’t break them. Set them aside.

Part VI – Fry The Cutlets

Heat a pan and add in oil. Fry the cutlets for about 5 minutes on each side. You will notice that the breadcrumbs get a brownish color and the cutlets become nice and crisp.

Part VII – Remove The Excess Fat

The best way to remove excessive fat from the cutlets is by putting them on a plate that has been lined with paper towels. The paper will draw out all the excess oil.

Can I Use Dry Chickpeas?

If you want to use dry chickpeas instead of from a can, reduce the quantity to 200 gms. Soak the chickpeas well in advance before cooking them. The reason why you use a smaller quantity of chickpeas is because they increase (almost double!) in size and weight after soaking.

  • 14 oz / 400g of cooked chick peas
  • 1 onion
  • 2 tbsps of oil
  • 3 tbsps of chicken like seasoning
  • 10-20 tbsps of all-purpose flour
  • breadcrumbs to coat the cutlets
  • oil to fry cutlets


  1. Peel and finely dice an onion.
  2. Blend onion with chickpeas, chicken seasoning, oil, and 10 tbsps of flour.
  3. Check whether the mixture needs more flour. It shouldn't be sticky, so add as much flour as needed. Incorporate it using your hands (knead it like the dough).
  4. Form flat cutlets in the shape and sizes you like.
  5. Coat each cutlet in breadcrumbs.
  6. Fry with oil for about 5 minutes on each side.
  7. After frying, place the cutlets on a plate lined with paper towels to remove the excessive fat.
  8. Serve warm,
