Shuba salad is an incredibly beautiful colored layered salad that is well loved in Polish households. The vibrant colors in the salad are from the beet and carrot used in the recipe. Originally from Russia, this recipe has become popular across western Europe and can be found in many households especially during herring season.

Shuba means fur coat. This name was given to the salad because of the outer layer of beets that is layered on top of it. The layers look a lot like a fur coat on top of the herring. 

Made of herring, beetroot, potatoes, carrots, dill pickles, eggs and more, this salad is incredibly tasty and very satisfying. Most people will make it as many as 6 hours in advance so that it can be refrigerated. This is because Shuba salad is best served cold.

Part I – Prepare The Beetroot And Potatoes

The first step to making Shuba salad is to prepare the beetroot and potatoes. If you haven’t cooked them already, peel them and cook them till they are soft. Set them aside to cool when ready.

Part II – Boil 6 Eggs

Use 6 eggs for this salad. Boil the eggs well. Remember you need hard boiled eggs for this recipe. Peel and grate the eggs when done.

Part III – Dice The Herring

Use either pickled or salted herring when making Shuba salad. Dice 6 of the herring and set aside.

Part IV – Grate A Carrot

Part V – Dice The Potatoes, Pickles And Beetroots

By now the potatoes and beetroots will have cooled. Dice the potatoes, beetroots and pickles. Set them aside.

Part VI – Peel And Finely Chop An Onion

Part VII – Layer The Salad

Once all the preparation is done, it is time to layer the salad. For this you can either use a large glass bowl or 6 small bowls. Layer the salad in the following order.

  • Herring
  • 1 tbsp. of mayo
  • Onion
  • Potatoes sprinkled with salt
  • 1 tbsp. of mayo mixed with 1 tbsp. of mustard
  • Beetroots sprinkled with salt and pepper (optionally)
  • 1 tbsp. of mayo mixed with 1 tbsp. of yogurt
  • Carrot
  • 1 tbsp. of mayo
  • Pickles
  • 1 tbsp. of mayo
  • Eggs
  • 1 tbsp. of mayo

Ingredients

  • 3 large dill pickles
  • 6 salted/pickled herring fillets
  • 2 large cooked beetroots
  • 4 large cooked potatoes
  • 1 onion
  • 1 large carrot
  • 6 hard-boiled eggs
  • 6 tbsps of mayonnaise
  • 1 tbsp of mustard
  • 1 tbsp of yogurt
  • salt, pepper
  • sprouts, parsley, dill or any other herb to decorate

Instructions

  1. If your beetroots and potatoes are not cooked, peel and cook them until soft.
  2. Hard-boil eggs, then peel and grate them.
  3. Dice herrings.
  4. Grate a carrot.
  5. Dice potatoes, pickles, and beetroots.
  6. Peel and finely chop an onion.
  7. In one large glass bowl (or 6 small bowls) lay the salad in the following order:
  • herring
  • 1 tbsp of mayo
  • onion
  • potatoes sprinkled with salt
  • 1 tbsp of mayo mixed with 1 tbsp of mustard
  • beetroots sprinkled with salt and pepper (optionally)
