First, cook the buckwheat till it’s soft.

Peel the courgette and carrot, then grate them and squeeze them to drain all the water. Dice onion and crush some garlic cloves.

Cook Time 25 minutes
Total Time 30 minutes

Ingredients

  • 1 cup of buckwheat
  • 1 courgette
  • 1 small carrot
  • 1 big onion
  • 2 garlic cloves
  • 2 eggs
  • 3 tbsps of all-purpose flour
  • salt
  • pepper
  • oil to fry

Instructions

  1. Cook buckwheat until soft.
  2. Peel and grate courgette and carrot.
  3. Squeeze grated veggies to remove the excessive water.
  4. Peel and dice an onion.
  5. Crush garlic cloves.
  6. Mix all the ingredients and season with salt and pepper.
  7. Using the spoon, place the small pieces of the dough on the hot pan with oil. Fry for 3 minutes on each side (buckwheat pancakes need to be golden).
  8. Place the buckwheat pancakes briefly on a plate lined with paper towels to drain off excess fat.
  9. Serve solo or with sour cream.
