The trick to making great Polish bread rolls lies in handling the yeast. The trick is to make sure that the yeast is kept rising in a warm area. This can be challenging if you live in a cold country. The best way to tackle the heat issue is to keep the dough next to a stove that is in use. That way the heat of the stove will encourage the yeast to rise quickly.

If the dough does not rise or double, don’t worry. You can also keep it for a longer duration till the yeast has finished doing its job.

Alternatively, you may make the dough in the evening and let it rise in the fridge overnight. That way, you will have quick fresh Polish bread rolls in the morning!

Once you are done kneading the dough, mold it into a ball and place it into a large bowl. Note that the bowl needs to be large enough for the dough to rise. Cover the bowl with a clean towel. This will prevent the dough from drying.

Part III – Leave The Dough To Rise

The dough needs to be kept in a warm place to rise. Generally, the dough is kept for 1 hour or till it doubles in size. The amount of time that the dough takes to rise can vary depending on the temperature of the surroundings.

Another alternative is to leave it in your fridge overnight. This way you can have fresh bread rolls for breakfast. Note that you would have to bring the dough to room temperature before you actually bake it!

Part IV – Line The Baking Tray With Parchment Paper

Parchment paper prevents the bread from sticking to the baking tray. It makes it very easy to bake.

Polish Bread Rolls Recipe Frequently Asked Questions

What Makes The Polish Bread Rolls So Fluffy?

Yeast is responsible for making the Polish bread rolls both soft and fluffy. When yeast ferments the sugar in the recipe, it produces carbon dioxide. This carbon dioxide then tries to escape and in the process makes the bread rise. When you bake the dough, the dough sets with nice pockets of air inside it. This gives it the fluffy texture that is loved.

My Dough Did Not Rise, What Did I Do Wrong?

If your dough did not rise, a couple of things could have gone wrong with your recipe. For one, your yeast could have been old. Make sure that you check the expiry of the yeast you use before you start the recipe. If the problem is with the yeast, you can’t really do much about it.

Another reason could be the temperature. Yeast requires a warm environment to work. So keeping it at the side of a stove that is in use can help. Also, make sure that there are no cool air drafts. Despite all this, the dough may not rise quickly. In that case, you just have to give the dough more time to rise.

Is The Recipe Different If I Keep The Dough Overnight In The Fridge?

The recipe remains the same even if you store the dough in the fridge overnight. You may however have to give the dough some time to come back to room temperature and then rise. This can be done after shaping the rolls and while waiting for your oven to preheat.

  1. So, I used all fresh ingredients and measured precisely. My buns did not rise or bake well. I got a pan full of hockey puks.

    1. The problem is either with yeast or with temperature in your kitchen. Yeast needs a warm, draft-free place.
