I mentioning rosó? on purpose. Because it’s one of the most famous Polish dishes and the base for many other zuppe like pomidorówka, there are many ways to take care of the broth leftovers. My favorite are sa?atka jarzynowa and this Polish pasztet.

If you want to eat Polish pate as a sandwich spread, you don’t need to add breadcrumbs at all.

ingredienti

  • 4 chicken leg quarters
  • 1 carota
  • 1 radice di prezzemolo
  • ¼ of celery root
  • 1 uovo
  • 1 cucchiaino di sale
  • ½ cucchiaino di pepe
  • ¼ tsp of nutmeg
  • olio
  • 3 tbsps of breadcrumbs (optional)

Istruzioni

  1. If you are using meat and veggies from the broth skip to the next step. If you are making Polish pasztet from the scratch, peel the veggies and cook them with chicken leg quarters until soft.
  2. Grind cooked meat and veggies.
  3. Preriscalda il forno a 180°C.
  4. Crack an egg into a bowl and whisk it using a fork.
  5. Add whisked egg to the veggie and meat mixture.
  6. If you want your Polish pasztet to be solid, add 3 tbsps of breadcrumbs.
  7. Mix everything well and pour into the loaf pan smeared with oil.
  8. Bake for 50 minutes.
