The Polish forest glade salad is sometimes also referred to as the mushroom glade salad. This is because of the mushroom caps that are used to decorate the top of the salad. Typically speaking, there are loads of different ways to make Polish forest glade salad. 

Usually, people modify the recipe depending on what they have at hand in their pantry. There are two ingredients that are always consistent. Mushrooms, which are what give the salad its second name and a layer of greens. In this recipe, I use parsley as the greens. Once these two layers are added to the top of the salad, it gets its iconic forest-like look. 

Adding the last two layers is a lot of fun if you want to involve young children. It is pretty easy for them to sprinkle the greens and add the mushrooms. Older children can help with the whole recipe.

Polish Forest Glade Salad Recipe – Leśna Polana

Part I – Peel And Cook Potatoes And Carrots Until Soft

Use 4 potatoes and 3 medium carrots for this recipe. Peel them and put them in a pot of boiling water to cook them till they are soft.

Part II – Dice The Potatoes

Dice the potatoes into small cubes and set aside. 

Part III – Dice The Carrots

Dice the carrots into small cubes and set aside. 

Part IV – Boil The Eggs

Use 4 eggs for this recipe. Boil the eggs till they are hard boiled. Peel and dice the eggs before setting aside.

Part V – Peel And Dice An Onion.

Part VI – Dice The Pickles And Pickled Peppers.

Part VII – Dice The Parsley

Wash the parsley well. This is to ensure that there is no grit in the leaves. Now chop the parsley really fine. The parsley will add a lot of flavor to the Polish forest glade salad so make sure to do this step well.

Part VIII – Layer The Salad

You will find that in this recipe, the most amount of time goes in preparing the ingredients. The last and final step is layering the salad. This is the easiest part of the Polish forest glade salad recipe. All that you have to do is place the layers in the following order.

  • Potatoes
  • 1 tbsp. of mayo. Add salt and pepper to taste.
  • Pickles.
  • Onions
  • 2 tbsps. of ketchup. Add salt and pepper to taste.
  • Sweet corn (Make sure that it has been drained or the water will make the whole salad soggy.)

Add a layer of corn to the Polish forest glad salad.

  • Eggs
  • 4 tbsps. of Mayo. Add salt and pepper to taste.
  • Carrots

  • Parsley.

Ingredients

  • 4 potatoes
  • 3 medium carrots
  • 4 eggs
  • 4 medium pickles/ dill pickles
  • 1 onion
  • 1 small jar of pickled peppers
  • 1 can of kernel sweet corn
  • 1 small jar of pickled/ marinated mushrooms
  • a bunch of fresh parsley
  • 5 tbsps of mayonnaise
  • 2 tbsps of ketchup
  • salt, pepper

Instructions

  1. Peel and cook potatoes and carrots until soft.
  2. Dice the potatoes.
  3. Dice the carrots.
  4. Hard-boil, peel and dice the eggs.
  5. Peel and dice an onion.
  6. Dice the pickles.
  7. Dice the pickled peppers.
  8. Wash and finely dice the parsley.
  9. Layer the salad in the following order:
  • potatoes
  • 1 tbsp of mayo, salt, and pepper
  • pickles
  • onion
  • 2 tbsps of ketchup, salt, and pepper
  • sweet corn (drained)
  • eggs
  • 4 tbsps of mayo, salt, and pepper
  • carrots
  • parsley
  • pickled mushrooms

Notes

You may use one large glass bowl or layer the salad in the small bowls.
