In spring and summer when fresh ingredients are easily available you will find that Poles tend to eat light and fresh salads. These are very tasty but they are also cooling which really helps with the summer heat.
One of my absolute favorites is the Polish egg and lettuce salad. It is an old recipe that my mother used every summer. It was always one of my favorite dinners. The best part about this recipe is that it is really easy to make and it requires just 5 minutes to put together.
No one wants to be in a hot kitchen in the summer and this is one of those recipes that helps you get in and out of the kitchen really fast. It also does not compromise on the nutritional quality of the meal because it uses fresh lettuce, eggs and boiled potatoes. This provides the perfect balance of fiber, carbohydrates, proteins and fats!
Polish Egg And Lettuce Salad Recipe (Summer Dinner Idea)
Part I – Wash And Shred The Lettuce
Wash and shred the lettuce. Keep the lettuce in a strainer to drain the excess water from it. This will make sure that the additional water does not dilute the salad dressing.
Part II – Make The Salad Dressing
In a bowl mix 1 cup of sour cream with 1 tsp of lemon juice, 1 tsp of sugar and 1 tsp of salt. If you do not have lemon juice you can substitute it with 1 tsp of vinegar. If you want, you can add in a tsp of mayo to the mix. This however is optional.
Part III – Dice 4-5 Hard Boiled Eggs
Part IV – Mix Everything Together

Part V – Serve With Mashed Or Boiled Potatoes

Salad
- 2 lettuces
- 4-5 hard-boiled eggs
- 1 cup of sour cream
- 1 tsp of lemon juice or vinegar
- 1 tsp of sugar
- a pinch of salt
- 1 tsp of mayo (optionally)
Others
- mashed or boiled potatoes to serve
Instructions
- Wash and shred lettuce.
- Mix sour cream with lemon juice, sugar, and salt. Add mayo if you want.
- Dice eggs.
