Pine Shoot Syrup Recipe – Syrop Z Młodych Pędów Sosny

Pine shoot syrup is popular in many Polish houses because it has a lot of health benefits. These are particular beneficial in the winter season because pine shoot syrup acts as an expectorant which is great when you have one of those nasty winter colds. It also has a lot of antibacterial properties which can help you get rid of the cold quickly. 

In Poland, you will find that people use the syrup prophylactically too. It is really tasty and is so much better than using the chemist sanctioned cough syrups. 

Pine shoot syrup is also a known diuretic and is rich in antioxidants. 

It is important to note that in Poland, you cannot just wander into the forests and woods to pick pine shoots. People do however have them growing in their gardens and plots. So if you know someone who does, you can request a few pine shoot cuttings or just pick them yourself. That is after you’ve asked permission of course.

How To Use Pine Shoot Syrup

Pine shoot syrup can be used easily in your daily life. This means that you will use it prophylactically without even realizing it. The syrup is sweet and delicious. It can be drizzled on a lot of different things. Think of it as your replacement to honey or chocolate syrup. Some of the best ways to incorporate the use of pine shoot syrup in your daily lives include drizzling it on pancakes, waffles, crepes, soft cheese etc.

Part I – Clean The Pine Shoots

For this recipe, you will need about 2 lbs (900g) of pine shoots. Clean the pine shoots and remove the insects that may be in them. Do not wash them.

Part II – Place A Handful Of Pine Shoots In A Big Jar

Part III – Cover With Some Sugar

Cover the pine shoots with some sugar. Don’t use all the 450g of sugar as you will need it when repeating the process.

Part IV – Repeat The Process

Keep repeating the process till you use all the pine shoots and sugar. This will give you multiple layers of pine shoots and sugar.

Part V – Twist Off The Jar

Seal off the jar and keep it aside. The sugar will melt and absorb the flavor of the pine shoots. This will form the pine shoot syrup that you will use. This process will take 2-4 days.

Part VI – Drain The Syrup

Use a strainer and drain the syrup. This will separate the pine shoots from the syrup. The resultant pine shoot syrup is what you will use.

Pour the syrup in a jar. Throw away the pine shoots. These have no further use.

  • 2 lbs (900g) of pine shoots
  • 1 lb (450g) of sugar

Instructions

  1. Clean the pine shoots out of insects. Don't wash them!
  2. Place a handful of pine shoots in a big jar.
  3. Cover with some sugar.
  4. Repeat the process until you use all the pine shoots and sugar.
  5. Twist off the jar and wait for 2-4 days for the syrup to be ready.
  6. Drain it on a strainer.
  7. Pour the syrup into the jar and throw away the pine shoots.
  8. Store the syrup in the fridge or in the cold basement for up to 1 year.
