What’s the best sauce for pierogi? Well, that’s a tough nut to crack considering the amount of dipping sauces and toppings, and how they mix and match. The sauce should of course complement the pierogi but not overpower them.

Every Pole has their go-to way of dishing up pierogi. However, there are a few staple sauces that go hand in hand with the most popular pierogi types. And the best part? We can tweak them to our liking. Simplicity is key here. The fewer ingredients and easier the method, the better.

We can split the sauces into two main camps: savory or sweet. Now, let’s dive deeper into this topic!

Do Polish Folks Have Their Favorite Dipping Sauce or Toppings To Pair With Pierogi?

This is a good question. It might surprise some, but Poles usually like to keep it simple when it comes to serving pierogi.

Many believe that pierogi are so good on their own that they don’t need much else. After all, it’s a national dish and its taste shouldn’t be disturbed by non-traditional ingredients.

The vast majority love to eat pierogi with melted butter or sauteed onions. Some prefer skwarki (fried pork fatback). Those are the three go-to toppings for savory pierogi.

As for sweet pierogi, sweetened sour cream is the most popular choice.

The Best Dipping Sauces And Toppings For Savory Pierogi

Melted butter is a classic choice when it comes to pierogi toppings. It just enhances the flavor of whatever filling you’ve got inside. So, how do you turn that butter into the ultimate pierogi topping?

The easiest way to enjoy pierogi with butter is to fry them in a pan and they’re ready to go! And trust me, don’t even think about swapping out the butter for oil here. If you’re going for the oil route, just make sure to leave it in the pan.

Sauteed onions topping

Sauteed onions are a great addition to savory pierogi. Yellow onions work best, but you can mix it up with red onions or shallots if you like.

Just chop up the onion and toss it in a lightly greased pan. Cook it until it’s soft and slightly see-through, usually just a few minutes. What oil should you use? Rapeseed oil is great, but any vegetable oil will do. And if you prefer butter, clarified butter is perfect for frying. It adds a special flavor and prevents burning.

Then, sprinkle those sauteed onions on top of your pierogi. Or why not cook them together with the pierogi for extra flavor? Just remember to add a bit more butter or oil to the pan so nothing sticks (but not too much, or it’ll get greasy). Enjoy!

Buttered bread crumb topping 

Buttered bread crumbs are a classic favorite in Poland, not just for pierogi but for many dishes. Making them is a breeze. I love adding them to pierogi leniwe.

First, melt about 2 oz (50g) of butter in a pan, then toss in roughly two tablespoons of bread crumbs. Let them sauté for a bit. Keep in mind that you want to fry the butter at a lower temperature to avoid burning, so take your time over a gentle heat.

Now, it’s worth noting that buttered bread crumbs are pretty high in calories. If you’re watching your intake, you can skip the breadcrumbs and just use melted butter or even drizzle some cold extra virgin olive oil over your cooked pierogi.

Fresh herb sauce

Fresh herbs are fantastic with pierogi.

Parsley is a classic choice that goes great with most savory pierogi. You can also toss in some dill, chives, marjoram, or rosemary, depending on what you like.

You can even prepare your own herb sauce for pierogi, which will give them a fresh taste. This Polish dish sauce will be a perfect addition to pierogi ruskie.

Sour cream sauce

Sour cream is awesome with pierogi! It’s creamy, tangy, and makes every bite even better. Whether you dunk your pierogi in it or pour it on top, sour cream takes your pierogi game to the next level of yum.

Cold sour cream pairs perfectly with warm pierogi. You can dive right into your pierogi with just a dollop of sour cream or jazz them up with some fresh herbs.

If you’re out of sour cream, no worries! You can swap it out with other products like Greek yogurt or skyr.

FUN FACT

Here’s a little surprise: back in the day, fried sour cream was a thing with pierogi. How do you make it?

Grab some sour cream with at least 18% fat (about ¾ cup / 200ml). Melt a tablespoon of butter in a pan.(If you go for a higher-fat sour cream, you won’t even need to add butter.)

Once it starts bubbling, toss in the sour cream. Crank up the heat and cook until it gets a bit lumpy.

Then, lower the heat and let it simmer. When it’s lightly golden and looking good, pour it over your freshly cooked pierogi.

Garlic sauce

Garlic enthusiasts can enhance the flavor of pierogi with garlic sauce, which pairs particularly well with pierogi with potato and cheese stuffing (pierogi ruskie).

This sauce will also work perfectly with savory pierogi baked in the oven.

You can easily prepare this sauce yourself if you don’t have it ready. Simply crush two cloves of garlic and season with salt and pepper. Add 1/2 cup (125 ml) of mayonnaise and 1/2 cup (125 ml) of sour cream (12%) or yogurt to this mixture. Then add two teaspoons of lemon juice and a pinch of sugar, and voila, it’s ready!

Bacon topping

Smoked, chopped, and browned bacon is the perfect meaty topping for pierogi. It goes well with pierogi ruskie or pierogi with meat or cheese. You can fry it together with onions to combine the benefits of these two classic pierogi toppings.

In Poland, we love to top our pierogi with traditional fried bacon or lard bits, known as “skwarki.”

Making them is pretty simple! Just cut your bacon or lard into big cubes and toss them into a pan. No need to add any extra fat because they’ll release their own as they cook.

Now, here’s the trick: resist the urge to stir them too much. If you do, they might end up rubbery, and that’s definitely not what we’re going for. Just give the pan a shake every now and then to make sure they’re browning evenly.

Cook them up over medium heat. The longer they sizzle away, the crispier and smaller they’ll get.

Oh, and a heads up! If you’re using bacon, it needs less time in the pan to avoid burning the meat inside.

Mushroom Sauce

If you have a bit more time, pierogi will taste delicious with traditional Polish mushroom sauce. My favorite combination is pierogi ruskie with this sauce.

The Best Sauces And Toppings For Sweet Pierogi

Poles are pretty laid-back when it comes to what they put on their pierogi. Sometimes they’ll slather on the same stuff whether they’re eating sweet or savory ones. It’s like some of those savory sauces just click with sweet pierogi too.

The fillings for sweet pierogi pack quite a punch in flavor, so you’ve got to be careful not to overdo it. That’s why our toppings are light and usually easy to prepare.

So, what’s the deal with toppings? Let’s dig in.

Lightly sweetened sour cream

Sour cream is like the go-to topping for pierogi, it works with both the sweet and savory kind. If it’s a bit tangy for your taste, just add a sprinkle of powdered sugar. And you can even swap sour cream for options like Greek yogurt or kefir. Easy, right?

Buttered bread crumbs with sugar and / or cinnamon

Buttered bread crumbs can also be prepared in a sweet version. They pair well with pierogi filled with white cheese, like pierogi leniwe. These pierogi are so versatile that you can serve them in both savory and sweet variations.

For the sweet version, we add some cinnamon for that extra kick of flavor.

Making this topping is a breeze. Just grab half a cup of breadcrumbs, toss them into a pan, and heat them over low heat until they turn a lovely golden brown.

Oh, and a heads up: remember to keep stirring them often to avoid burning.

Once they’re golden, throw in two tablespoons of butter, 1-2 teaspoons of sugar, and 1/2 – 1 teaspoon of cinnamon. Let them hang out on low heat for a bit, stirring until the butter melts and mixes in with the breadcrumbs.

And if you’re watching your sugar intake, you can totally skip the sugar. The cinnamon will still give them that awesome flavor kick.

If you’re not a fan of cinnamon, no worries! You can do it the other way around and just stick with the sugar.

Powdered sugar and vanilla sugar topping (plus some melted butter)

When it comes to serving sweet pierogi, Poles like to keep it surprisingly simple quite often. A lot of folks just sprinkle some powdered sugar or mix in some vanilla sugar.

Some go for even greater convenience and simply sprinkle their pierogi with white sugar. Of course, feel free to swap sugar out for honey if you prefer.

And if you’re feeling fancy, a dollop of melted butter on top does wonders. It’s quick, easy, and absolutely delicious.

Berry sauce with sour cream

Fruit sauce is a hit, especially in the summer when we have plenty of fresh fruits and add them to various dishes, including pierogi. How do you make such a sauce the easiest way?

First, choose fresh fruits (strawberries, raspberries, or blueberries work best). Then mash them with a fork to get a smooth consistency. For two cups of fruit, add two to three tablespoons of powdered sugar and mix with half a cup of 18% sour cream. Voila! Your sauce is good to go.

Fresh fruits are preferable here, but you can also use frozen ones. Start by thawing the frozen fruits, then puree them in a blender. Stir thoroughly the pureed fruits with sour cream and powdered sugar.

Alternatively, you can use Greek yogurt (or any other thick yogurt) instead of sour cream.

Fruit mousse dip

You can also turn fresh fruits into delicious mousse. How to do it?

Put two cups of fruits (preferably strawberries, raspberries, or blueberries) in a saucepan. They can be frozen or fresh. Add about two teaspoons of sugar and cook over low heat for a few minutes. (Raspberries or blueberries for about seven minutes, strawberries for up to fifteen minutes). Stir them gently all the time until they soften slightly. Let them cool for a moment, and you’re done.

Poles often top their pierogi with such mousse and of course sour cream. That’s a perfect combo!

Vanilla Sauce

If you’re a fan of vanilla flavor, you can serve pierogi with vanilla sauce, and it’s best to make it yourself.

In a saucepan, bring 30% cream (¾ cup / 200ml) with a split and scraped vanilla bean to a boil. Whisk two egg yolks with five tablespoons of sugar. Add the hot cream to them and bring to a boil again. Strain the sauce through a sieve and let it cool.

To sum it up, these dipping sauces and toppings are the real deal, tried and tested by us Poles. And you know what’s the secret to a great sauce? Just keeping it simple!
