How To Make This Quick Gingerbread Cake?
Step 1 – Preheat The Oven To 355F / 180C.
This gingerbread cake is quick to make so it’s best to start with preheating the oven.
Step 2 – Chop Dried Nuts & Fruits If Necessary.
Then coat them with 1 tbsp of all-purpose flour.

Step 3 – Beat Eggs With Sugar
Do it for about 5 minutes until they change the color to whitish.
Step 4 – Add Oil & Beat Again
Step 5 – Mix Dry Ingredients
Mix flour with baking soda, gingerbread spice, and cocoa in a separate bowl.
Step 6 – Add Dry Ingredients To Batter
And mix.
Step 7 – Add Milk & Jam
Finally, add milk and jam and mix.
Step 8 – Add Dried Fruits & Nuts
Do it carefully, using the spoon.
Step 9 – Transfer To Pans & Bake
Transfer the batter to two 9.5” bread pans. Bake for 45 minutes.

Step 10 – Decorate The Cakes
Melt butter with sugar in a pot. Add cocoa, and milk.

Pour the chocolate glaze on the cakes and decorate with dried fruits, nuts, or candided orange peel.

- 4 eggs
- 1 cup / 7oz / 200g of sugar
- ½ cup of oil
- 2 cups / 9oz / 250g of all-purpose flour
- 1 tsp of baking soda
- 4 tbsps of gingerbread spice
- 2 tbsps of cocoa
- 1 cup of milk
- 5 tbsps of thick jam (any)
- 1 cup od chopped dried fruits & nuts (any) + 1 tbsp of flour to coat
Chocolate Glaze
- 3.5oz / 100g of butter
- 3oz / 80g of sugar
- 3 tbsps of milk
- 4 tbsps of cocoa
Instructions
- Preheat the oven to 355F / 180C.
- Beat eggs with sugar until they change color to whitish (for about 5 minutes).
- Add oil and beat again.
- Mix flour with baking soda, gingerbread spice, and cocoa in a separate bowl.
- Add to batter and mix.
- Add milk and beat.
- Add jam and beat.
- Coat dried fruits & nuts with flour.
- Add to batter and mix using a spoon.
- Transfer the batter to two 9.5'' bread pans.
- Bake for 45 minutes.
- Decorate with chocolate glaze & dried fruits and nuts (optionally)
Homemade Chocolate Glaze
- Melt butter with sugar.
- Add milk and cocoa.
- Mix. Pour on the cake immediately.
