Although raw egg yolk is a must-add ingredient in any Polish sweet cheese recipe, you can skip it if you want to be sure you won’t get a Salmonella infection.
Eating raw eggs is always a bit risky, so if you decide to add a yolk, make sure to wash the egg first.
If you want to warm Polish sweet cheese up, f.e. you are doing it to stuff the buns, it’s perfectly safe to add the egg yolk.
If You Want To Get The Lighter Version Of Polish Sweet Cheese, Use Greek Yoghurt Instead Of Butter
Alternatively, you can use the sour cream.

- 2 cups of cottage/ farmer cheese
- 2 tbsps of butter
- 1/2 cup of sugar, xylitol or any other sweetener
- 2 egg yolks (optional)
- 1/2 teaspoon of vanilla extract (optional)
Instructions
- Mix all the ingredients together using a food processor or blender until you will get a smooth and creamy consistency.
Notes
Adding egg yolks is optional and it's only recommended when you will heat the Polish sweet cheese afterward (f.e. it's a filling for the sweet buns).
