Tips For Making Polish Meatballs In Dill Sauce
Meatballs Should Be The Size Of Walnuts.
You can make them bigger or smaller, however, the size of the walnut would be perfect.
Use White Meat.
Polish meatballs in dill sauce should be made from the light meat, for example:
- chicken
- turkey (see my turkey with dill sauce recipe)
- veal
- rabbit

Add Fresh Or Dried Dill.
Fresh dill will definitely make the dish taste better, however, dried dill will work just fine. You can even use frozen dill if you happen to have it in the fridge.
What To Serve Polish Meatballs In Dill Sauce With?
Polish meatballs with dill sauce taste best with:
- rice (preferably white or basmati rice)
- potatoes (boiled/baked/fried)
- groats (pearl barley, barley, buckwheat)
- bread
- veggies (cooked or fresh)

My mom’s Polish meatballs in dill sauce recipe.
Ingredients
- Meatballs
- 1 lb / ½ kg of minced meat (chicken or turkey)
- 1 onion
- 1 egg
- ½ tsp of salt
- ¼ tsp of black pepper
- ½ tsp of dried marjoram
- oil
Dill Sauce
- 2 cups of water
- ½ tsp of salt
- ¼ tsp of black pepper
- 3 allspice berries
- 2 bay leaves
- 5 juniper berries
- ½ cup of heavy cream
- 4 tbsps of flour
- a handful of chopped dill
Instructions
How To Make Polish Meatballs?
- Peel, dice an onion and sweat it on oil.
- Combine with the rest of the ingredients and mix until you'll get a smooth consistency.
- Start forming meatballs. Each should have a size of a walnut.
- Fry meatballs on oil (3-5 minutes each side) or bake them in the oven (392°F / 200°C for 10-15 minutes).
How To Make Dill Sauce?
- Boil water with spices.
- Mix the cold heavy cream with the flour.
- When the water with spices starts boiling, turn off the heat.
- 3-5 minutes later, start pouring the heavy cream with flour very slowly, stirring constantly.
- Add chopped dill and cook fr another 2-3 minutes.
Final Steps
- Add meatballs to the sauce. Serve warm.
