Polish Campfire Casserole Recipe – Prażonki or Pieczonki

Making prażonki is as easy as chopping up your ingredients and letting them cook in a pot over the fire. The best part? You can customize it to your liking by adding your favorite spices or trying different combinations of veggies.

No campfire? No problem! You can also recreate this delicious dish in your own kitchen. Simply place all of your ingredients in a heat-resistant dish and bake in the oven until everything is tender and cooked through.

Every year, food enthusiasts and outdoor lovers gather for the Prażonki Festival, a celebration of this beloved campfire dish. Held in Poręba, this vibrant event showcases the best prażonki recipes from across Poland, with local chefs and home cooks competing for the title of Prażonki Champion.

Visitors can sample a wide variety of prażonki variations, from traditional to innovative, all while enjoying live music, folk dancing, and other festive activities. The Prażonki Festival is a true celebration of Polish culinary heritage and a must-visit for anyone who loves good food and outdoor cooking.

How To Make Prażonki?

Step 1 – Prepare a Campfire or Heat-Resistant Vessel

Any vessel will work, just make sure it will be big enough to put all the veggies & meat inside.

Step 2 – Peel & Slice The Veggies

The vegetables that need to be peeled and sliced are:

  • potatoes
  • beetroot
  • carrots

Step 3 – Peel & Cut Onions Into Half-Moons

Get your onions ready by cutting them into  half moons.

Step 4 – Prepare The Bacon & Sausage

Cut out the skin from the bacon. Cut the remaining bacon into small strings/ cubes.

Slice the sausage.

Step 5 – Lay Prażonki In A Vessel

Lay the dish in the following order

  • Bacon skin
  • Cabbage leaves (just to cover the bottom)
  • Half of the potatoes
  • Salt & pepper (½ tsp of salt and ¼ tsp of pepper)
  • Onion
  • Beetroot
  • Carrot
  • Sausage
  • Bacon
  • Half of the potatoes
  • Salt & pepper (½ tsp of salt and ¼ tsp of pepper)
  • Cabbage leaves (just to cover the potatoes)

Ingredients

  • 7 lbs (3kg) of potatoes
  • 9 oz (250g) of whole smoked bacon
  • 11 oz (300g) of carrot
  • 9 oz (250g) of onion
  • 2 ½ lbs (1kg) of sausage
  • 1 large beetroot (6 oz /180g)
  • 8-10 large cabbage leaves
  • salt
  • pepper

Instructions

  1. Cut out the bacon skin. Place it on the bottom of your campfire / heat-resistant vessel.
  2. Cover with cabbage leaves (they should cover the entire bottom of the vessel)
  3. Peel and slice potatoes into thin slices.
  4. Place half of the potato slices on the cabbage.
  5. Season with ½ tsp of salt and ¼ tsp of pepper.
  6. Peel and cut onion into half-moons. Place it on the potatoes.
  7. Peel and slice the beetroot. Place it on the onion.
  8. Peel and slice the carrot. Place it on the beetroot.
  9. Slice the sausage, then place it on the carrot.
  10. Peel and cut bacon into strings/cubes. Place it on the sausage.
  11. Cover with the remaining potatoes.
  12. Season with ½ tsp of salt and ¼ tsp of pepper.
  13. Cover with cabbage leaves.
  14. Bake in 355°F (180°C) for 90 minutes. Serve warm.
