Polish Blueberry Babka Recipe – Babka Z Jagodami

How To Make Polish Blueberry Babka?

Step 1 – Preheat the oven to 355F / 180C

Making babka takes just 10 minutes so it’s best to start with preheating the oven.

Step 2 – Beat Butter With Sugar

Do it for about 5 minutes until the sugar dissolves and it changes the color to whitish.

Tips For Making The Blueberry Babka

I Don’t Have A Bunt Pan. What To Do?

You may replace it with a 9 x 13” pan. The baking time may be shorter, so check for doneness after 50 minutes or so.

Can I Use Frozen Blueberries?

Yes. Make sure to defrost them first and pour out all the juice. Blueberries need to be dry otherwise babka may not turn out well.

Can I Use Other Fruits?

Absolutely! Any berries will work. If you use bigger fruits, for example, apples, cut them into small chunks.

How To Decorate Blueberry Babka?

Dust it with powdered sugar, pour chocolate frosting or sugar glaze on it. For me, this babka doesn’t need any topping. It’s sweet and delicious enough.

Ingredients

  • 9 oz / 250g of soft butter + some more to grease the pan
  • 1 cup / 200g / 7oz of sugar
  • 4 eggs
  • 6 oz / 170g of sour cream
  • 3 cups / 360g / 12 oz of all-purpose flour
  • 2 tsps of baking powder
  • 7 oz / 200g of blueberries +1 tbsp of flour

Instructions

  1. Preheat the oven to 355F / 180C.
  2. Beat butter with sugar for about 5 minutes until the sugar dissolves.
  3. Add eggs, one by one, mixing all the time.
  4. Add sour cream and mix.
  5. Add flour and baking powder. Mix until you get a smooth batter.
  6. Coat blueberries with flour
  7. Add them to the batter and mix.
  8. Grease 9'' / 22cm bundt pan with butter.
  9. Pour the batter into the pan.
  10. Bake for 65 minutes.
  11. Allow to cool completely before taking babka out of the pan.

Notes

  1. If you want your blueberry babka to be sweeter, you may dust it with powdered sugar.
