But first, let’s travel back in time… Marcepan Królewiecki hails from the historical region of East Prussia, specifically Königsberg (now Kaliningrad, Russia). This region, with its rich cultural tapestry, was once a melting pot of culinary traditions. It was here that these unique almond cookies were born, their name, “Królewiecki,” paying homage to their city of origin.

The Ministry of Agriculture and Rural Development recognized the uniqueness and cultural significance of this pastry by listing it as a traditional product. It’s a true treasure of Polish cuisine that is worth discovering and loving.

Ingredients

  • 14 oz (400g) of almond flour / ground blanched almonds
  • 14 oz (400g) of powdered sugar
  • 8-10 tablespoons of rose water or water
  • 1 small jar of filling (jam / custard / cream)
  • (optionally) 2-3 tbsps of your favrotie liquor e.g. amaretto

Instructions

  1. Blend or knead almond flour with powdered sugar and water/rose water (and liquor if you want to add it). Do it for at least 10 minutes.
  2. Wrap marzipan in plastic or parchment paper. Place in the fridge for at least 2 hours or overnight.
  3. Start forming your cookies. Form walnut-size balls. Gently press your finger inside the ball (that will be the space for the filling).
    Now, flatten the bottom of the cookie so they don't tip over.
  4. Preheat the oven to 390F / 200C, broiling mode (only heating on the top of the oven).
  5. Place the cookies on a baking tray lined with parchment paper.
  6. Decorate the edges of the cookies. Do it by pressing the fork gently all around the cookies.
  7. Bake for 8-10 minutes until the cookies change color to golden brown.
  8. Allow to cool.
  9. Place jam/ custard in the middle of the cookies.
