Ingredients

  • 2 cups of pasta (pappardelle, rotini, penne, any other.)
  • 9 oz / 250g of Polish sausage (kielbasa)
  • 1 onion
  • 2 tbsps of oil or pork lard
  • 2 eggs
  • salt, pepper
  • chopped parsley or chives to serve

Instructions

  1. Cook the pasta according to the packet instructions.
  2. Dice the sausage and onion. Fry until they change the color to brownish.
  3. Fry the cooked pasta with 2 tbsps of oil. Add 2 eggs, season with salt and pepper, and fry for another few minutes. Eggs and pasta in a dish..
  4. Mix all the ingredients and fry for a while. If necessary, add more salt and pepper.
  5. Serve hot with fresh chopped parsley and chives.

  1. As I see it, this dish has nothing to do with the Italian pasta alla carbonara. In pasta alla carbonara eggs are cooked in the heat of the freshly cooked and fried guanciale or pancetta pasta, not fried with them.
    Italians would be outraged, but such a dish would be easily accepted in Poland, though it is certainly not a traditional Polish way of serving pasta.
    BTW: what’s so “not-easy-to manage” with spaghetti or rigatoni, tradionlly used in Italy for pasta alla carbonara, in contrast to pappardelle, rotini or penne as proposed by you?
