Tips For Making Polish Meatballs With Mushroom Gravy

Use Pork Or Beef.

You can either make your Polish meatballs from pork or beef. The best would be to mix these two kinds of meats.

Chicken, turkey, veal, or venison would work too, however, they would taste best with other gravies, such as dill sauce, mustard sauce, horseradish sauce, or tomato sauce.

Adding Heavy Cream Is Not Necessary.

If you want to make your mushroom gravy lighter, you may skip adding heavy cream. The sauce won’t be as creamy, however, it still will be delicious.

You Can Replace Mushrooms With Champignons.

Wild mushrooms taste better with Polish meatballs, however, you can use champignons as well. It’s especially recommended if you want to share this dish with kids- they are not supposed to eat mushrooms until they reach the age of 12.

Use Fresh Mushrooms If You Want.

If you have fresh mushrooms, you can use them to make your mushroom sauce! You won’t need to soak them in water overnight – dice and cook them straight away.

Ingredients

Meatballs

  • 1 lb / ½ kg of minced meat (beef or pork)
  • 1 onion
  • 1 egg
  • ½ tsp of salt
  • ½ tsp of dried marjoram
  • ¼ tsp of black pepper
  • oil

Mushroom gravy

  • 4.5 oz / 125 g of dried mushrooms
  • ½ tsp of salt
  • ¼ tsp of black pepper
  • 3 allspice berries
  • 2 bay leaves
  • 5 juniper berries (fresh or dry)
  • ½ cup / 125ml of heavy cream

Instructions

How To Make Polish Meatballs?

  1. Peel, dice an onion and sweat it on oil.
  2. Combine with the rest of the ingredients and mix until you'll get a smooth consistency.
  3. Start forming meatballs. Each should have a size of a walnut.
  4. Fry meatballs on oil (3-5 minutes each side) or bake them in the oven (392°F / 200°C for 10-15 minutes).

How To Make The Mushroom Gravy?

  1. Cover the mushrooms with 3 cups water and leave to soak overnight.
  2. The next day, you can either dice the mushrooms or leave them whole (it's up to you).
  3. Add the remaining ingredients for the mushroom gravy (except for onion and heavy cream) and cook slowly for 1,5-2h.
  4. In the meantime, peel and dice an onion. Sweat it on oil and add to the mushroom gravy.
  5. After 1,5-2h, turn off the heat. 3-5 minutes later, start pouring the heavy cream very slowly, stirring constantly. A person preparing a traditional Polish dish by pouring milk into a pot on a stove.
