We Have Flatbread Too! Finding My Mom’s Podplomyki Recipe

When I was visiting Bangkok 8 years ago we had a delicious meal in an Indian restaurant. We were lucky enough to meet the chef who showed us how they make the delicious Indian flatbread rotis and naans. 

We were amazed that the bread is so simple to make and it’s so delicious!

After coming back and settling down in Poland 5 years ago, I dived deeper into Polish cuisine. I read many Polish cookbooks, but I was taught by my mother-in-law, mom, and grandma. It’s the lessons handed down from the older generation that are the best!

When I stumbled upon a “podplomyki” recipe in my mom’s old, handwritten cookbook I was so surprised!

It turned out that we have a very similar bread in Poland. I asked my grandma about this dish, and she said she remembers her mother making this dish when she was younger.

When they were too hungry to wait until the bread was ready to eat, grandma’s mom would put tiny pieces of dough in the old oven. These cooked faster and were great treats for them! No wonder though, because “PodpÅ‚omyk” literally means “baked under the flame”.

Where Did Podplomyki Flat Bread Originate?

Flatbreads like the podplomyki have been around for centuries. From the early 5th century Greek barley bread to the matzaah bread eaten in the Bible, to more modern varieties. 

In Slavic regions, flat breads were made of rye flour or wheat and and baked on hot stones in fireplaces. When stone fireplaces were not available, the breads were made in the open over a fire with hot stones. Over time, pork lard or spices such as cumin were added to different breads.

We don’t when this specific Polish version originated, but it’s a traditional Slavic flatbread and has some similarities to the breads made by neighboring countries too. The Armenians also make a similar flat bread with the same name podplomyki.

How To Make The Podplomyki Flat Bread?

Start by mixing all the ingredients to prepare the dough and leave it to rest for 10 minutes. If you can leave it overnight, even better.

My family recipe for podplomyki includes pork lard in the dough, but it’s also quite popular to use only flour and boiling hot water.

Leave the dough to rest

Preheat the frying pan with oil. Tear off a small piece of dough and stretch it out with oiled hands to form a flatbread. Fry on both sides for a few minutes before moving onto the next one. And that’s it! Tasty traditional podplomyki are ready to eat!

Tips For Preparing Polish Flat Bread 

  • If you have extra dough, you can freeze it and use at a later time. Simply thaw in the refrigerator before using. 
  • If you have a traditional wood fire oven, this bread can be made there!
  • If you wish to make the flat breads more easily, you can flatten them out with a rolling pin.
  • For flavor, use pork lard or rapeseed oil.
  • If you want it without flavor, use sunflower oil!
  • If you don’t use pork lard, these Polish flat breads are egg less, vegetarian and vegan!
  • If you wish, you can add fried chopped onions, cumin, thyme or black seeds to the flat bread!
  • Always serve hot or warm!

Ingredients

  • 3 cups (480g) of all-purpose flour
  • 1 cup of water
  • 3.5oz (100g) of pork lard OR â…“ cup of oil
  • â…“ tsp of baking powder
  • â…“ tsp of salt

Instructions

  1. Knead the dough.
  2. Leave it to rest for at least 10 minutes, may be overnight.
  3. Heat up the frying pan/ skillet.
  4. Oil your hands.
  5. Tear off a small piece of the dough and stretch it to form a flatbread.
  6. Fry the flatbread on the pan for about 3-4 minutes on each side.
  7. Repeat the process with the remaining dough.

  1. Brilliant, on a trip to Krakov I walked through an underpass to the big shopping centre and popped into a small bakers and purchased a type of flat bread full of little black seeds with honey.
    Does anyone know what it is called as it tastes fantastic.

    1. Yes, it’s called “obwarzanek”. It’s typical to Kraków, I love obwarzanki too! I need to post my obwarzanki recipe on the blog.
