What Is Mazurek?

Mazurek is a word with many different meanings. When someone talks about mazurek, do you think of our brave national anthem Mazurek Dąbrowskiego? Or do you think of the lovely melody of the Mazurek of May, Mazurek 3 Maja? Or do you think of the delicious and beautiful mazurek pastry decorated with nuts or jam that we Poles make for Easter. 

I think of all three! And isn’t it perfect listening to the mazurek 3 maja while gulping down some rich mazurek cakes?

What Is Mazurek Krolewski?

Mazurek is a traditional Polish shortcrust cake. The mazurek can consist of either one or two layers of shortcrust pastry that can either be plain or formed into a lattice-like shape. A layer of thick jam (I recommend this one), marmalade, icing, or frosting is added either on top of or in between the layers of shortcrust pastry. 

There’s also a mazurek orzechowy made with walnuts that has been listed as a traditional product by the Polish Ministry of Agriculture and Rural Development since 2011. The dough for this nutty Easter shortcake or mazurek is made with ground walnuts while the icing and frosting also include walnuts. 

Where Did Mazurek Originate?

Mazurek may have originated in the Masovian region of Poland and could be a creation of the Mazurzy tribe that lived there.

Another legend states that the mazurek cake was named after the Polish mazurka, a traditional folk dance that everyone loves. And another says that the mazurek krowleski recipe actually came to Poland from Turkey in the 17th century. 

You’ll always find the mazurek on the Easter table to celebrate the end of Lent and as the perfect reward for fasting.

The mazurek cake must always be flat but can be round, square or rectangular in shape. You’ll also find cakes shaped like Easter bunnies or lavishly decorated with nuts, dried fruit, and jam.

This Polish shortcrust cake is rich enough to be called a ‘royal’ mazurek recipe or mazurek krowleski recipe. The word królewski actually means royal!

How To Make Royal Mazurek Krolewski 

Step I – Prepare The Dough

The royal mazurek recipe is easy to follow. Hard-boil 4 eggs, use the whites for something else, and keep the boiled yolks. You’ll also need 1 raw egg yolk (use the egg white for an omelet or any other dish).

Mix the boiled and raw yolks with all the dough ingredients, and refrigerate for at least 1 hour.

After an hour, roll out three-quarters of the dough to about 1.5 cm thick and line the cake pan. Use the remaining one-quarter dough to form the diamond shapes and edges of the pastry.

Bake for about 35 minutes and allow to cool.

Step II – Fill The Pastry

Once the shortcrust has cooled, add jam to each of the dimples. Sprinkle with icing sugar and serve!

Tips For Making The Best Royal Mazurek Krolewski 

  • If the dough is too sticky, add more flour.
  • You can bake this cake using a square pan, round pan, rectangle pan, or even the Easter bunny shape pan.
  • The mazurek dough should be crumbly and break apart nicely. 
  • You can replace the orange zest with lemon zest.

Which Flavor Jam Should I Use?

You can use any flavor of thick jam that you prefer. If you wish, you can even mix a few different flavors of jam to make the cake colorful (use one color of jam inside each dimple).

What Can I Use Instead Of Jam?

If you don’t want to use jam, you can use chocolate frosting or cream frosting. And you can sprinkle the cake with chopped nuts and dried fruit.

If you don’t have time to make the frosting, Nutella is a great alternative! So is poppy seed filling!

Ingredients

Royal mazurek dough ingredients

  • 3 sticks of butter (330g)
  • ¾ cup (150g) of sugar
  • 3 cups (360g) of all-purpose flour
  • 5 eggs (4 boiled egg yolks + raw egg yolk)
  • 3.5oz (100g) of crushed blanched almonds
  • zest of half an orange
  • a pinch of salt

Other ingredients

  • a jar of thick jam (10oz/280g)
  • icing sugar

Instructions

  1. Hard-boil 4 eggs. Peel and separate egg yolks from egg whites. You will need 4 boiled egg yolks only.
  2. Separate 1 raw egg yolk from egg white. You will need 1 raw egg yolk only.
  3. Mix all the ingredients for the dough. Wrap it in plastic wrap and refrigerate for at least 1 hour. The mazurek krolewski recipe is displayed on a counter.
  4. Line a baking sheet (14''x17'') with parchment paper.
  5. Preheat the oven to 320°F (160°C).
  6. Roll out ¾ of the dough on the parchment paper. It should be about ½" (1.5cm) thick.
  7. Using a knife, cut the edges of the dough to shape it into a square. Roll out the mazrurek dough to 1.5 cm thick.
  8. Use the remaining dough to make the diamond-shaped lattice. Remember to shape the edges as well. mazurek królewski pastry with dimples.
