Quicker to make than traditional pÄ…czki, these krepliki donuts can be ready in half an hour. Stuff them with jam or cook plain for a quick snack for Tlusty Czwartek or at any other time of the year. 

What Is Krepliki Serowe?

Another Polish dish made during the period from New Year’s till TÅ‚usty Czwartek, krepliki serowe are traditional Silesian donuts made with cream cheese without the yeast. 

They were a popular dish eaten during Carnival in Silesia. During the games, the young girls and boys who gathered would often eat krepliki, chrusty, and paczki. 

Some old traditions say that during Tlusty Czwartek villagers would disguise themselves and visit different homes in the villages. As a reward for this, they would receive paczki or krepliki. 

Easier and quicker to make than traditional pÄ…czki donuts, the krepliki serowe are also heavier, but tasty too. They can be filled with jam or marmalade for a sweet treat or simply prepared without the filling.

How To Make Krepliki Serowe – Polish Silesian Donuts Recipe

Mix all the ingredients together and knead until it leaves your hands easily. Let the oil start heating up.

Form the krepliki into tangerine-sized balls. Flatten each ball, put a teaspoon of jam in the middle and close it properly so that it doesn’t leak. Your kid can help you to add the jam so that you can use both your hands to close the donut correctly.

Tips For Makin The Best Krepliki Serowe

  • You can use any flavor of jam to fill the krepliki. 
  • You don’t need to fill the krepliki with jam. If you want to keep them plain, make them smaller (walnut size). 
  • This recipe makes krepliki for many people. If feeding only a few individuals, reduce the recipe to half or quarter. 
  • You can also fill the krepliki with candied fruit or cream cheese. 
  • If you don’t have cream cheese, you can use farmer’s cheese
  • Let your child help you with adding the jam to the krepliki. It’ll be fun!
  • Don’t dust the krepliki serowe with sugar till just before serving!

How To Store Krepliki Serow?

Store the Silesian donuts in an airtight container at room temperature for 3 to 4 days, or in the refrigerator for 6 to 7 days. You can reheat the donuts before serving.

If you know that you’re making extra donuts that will require refrigeration or reheating, it’s best to wait till just before serving to add the sugar!

Krepliki serowe are traditional Polish donuts filled with jam. They're easy to make for Tlusty Czwartek or as a quick snack.

Ingredients

Dough ingredients

  • 35oz (1kg) of cream cheese
  • 7-10 cups of all-purpose flour
  • 4 eggs
  • 2 tsp of baking soda
  • 1 cup of sugar
  • 1 stick (110g) of butter

Others

  • 4-6 cups of oil to fry
  • marmalade/ solid jam to fill krepliki
  • icing sugar to sprinkle krepliki (optionally)

Instructions

  1. Mix all the ingredients for the dough together. Depending on the type of cream cheese, you will need 7-10 cups of flour. Keep adding the flour and knead until the dough can be easily detached from your hands.
  2. Pour the oil into the wok or big pot and start heating it up.
  3. Start forming krepliki.
  4. Using floured hands, form the dough into tangerine-sized balls.
  5. Flatten each ball, place 1 teaspoon of jam in the middle and wrap it with dough carefully, making sure it stays inside.
  6. When the oil is hot enough, start frying krepliki. They should be fried for about 5 minutes on each side. Donuts need to be dark brown. The golden color probably means the dough is still raw inside.

    How to check whether the oil is hot enough? Throw a small piece of the dough into the oil. If it stays on the bottom, the oil is still too cold. If the dough comes straight up to the surface, the oil is ready to fry.
  7. After frying, place krepliki serowe on a plate lined with paper towels to remove the excessive fat.
  8. You may sprinkle krepliki with icing sugar after frying, however, it's not necessary, they are already sweet enough.
