The recipe for the Polish carnival rosettes is surprisingly easy. I’ve always thought that making these cookies is really difficult, as they look pretty impressive. My mother-in-law has taught me how to make róże karnałowe and I couldn’t believe it’s THAT easy.

My favorite parts? Putting together the layers of cookies to form a pretty rose and waiting eagerly to taste the first one that was fried topped with jam. 

What Is Róże Karnawałowe?

Róże Karnawałowe or Polish carnival rosettes are delicious cookies that are made to look like roses. Cooked during Carnival time in Poland, these crisp and dainty cookies are really tempting.

Made during the Lenten Carnival, they’re one in a series of dishes that are simply made to finish off the lard, sugar, and eggs that can’t be eaten during the Lenten fast.

Some of the other dishes that are popular for Fat Thursday or Tlusty Czwartek are angel wing cookiesrosette cookies, oponki, and paczki donuts.  

The dough for róże karnawałowe is made with flour, eggs, salt, and sugar, and three discs are pressed together in the form of a rose before being topped with jam and icing sugar. 

How To Make Róże Karnawałowe – Polish Carnival Rosettes?

Prepare the dough for the róże karnawałowe and roll it out to ⅕” thickness.

Cut three sizes of circles using cookie cutters or different-sized glasses. Then cut the edges at 4 spots on each circle and assemble together by pressing the center so that they stick together.

Fry in oil on both sides till golden brown. Drain the excess oil and sprinkle the carnival rosettes with icing sugar.

Put a bit of jam or cherry in the center of the rosettes and serve!

Tips For Making Scrumptious Polish Carnival Rosettes 

  • Add the vodka or vinegar to the dough so that it doesn’t absorb oil. 
  • If you don’t have cookie cutters, use different-sized glasses to make the rosettes.
  • Don’t roll the dough too thick or the roses will be chunky!
  • Make sure you don’t cut the discs too deep or the roses will fall apart. 
  • If making the rosettes for adults only, you can add some vodka or wine to the dough. 
  • Sprinkle the carnival rosettes with powder sugar or cinnamon sugar and top with jam.

Ingredients

  • 2 cups of all-purpose flour
  • 2 egg yolks
  • 2 eggs
  • 2 tbsps of sour cream
  • 1 tbsp of vodka/vinegar/distilled spirit
  • 1 small jar of thick jam, plum butter or cherries
  • oil to fry
  • icing sugar to sprinkle the cookies

Instructions

  1. Mix the flour, eggs, egg yolks, sour cream, and vodka/vinegar. Knead the dough.
  2. Roll out the dough to about ⅕'' thickness.
  3. Use 3 different sizes of cookie cutters or glasses to cut the circles from the dough. You will need big, medium, and small circles. A sheet of yellow dough with two glasses on it, used for preparing Polish Carnival Rosettes.
  4. Cut the edges of each circle at four spots. Be sure the spaces between each cut are the same (see the photo below). Róże karnawałowe dough circles cut at the edges.
  5. Assemble the rosettes by putting the circles in layers: the big one on the bottom, the medium in the middle, and the small on the top. Róże karnawałowe.
  6. Using your finger, press the center of the rosettes to make sure the circles are well-connected and they won't fall apart when frying.
  7. Heat up the oil.

    How to check whether the oil is hot enough? Throw a small piece of the dough into the oil. If it stays on the bottom, the oil is still too cold. If the dough comes straight up to the surface, the oil is ready to fry.
  8. Fry Polish carnival rosettes until they change the color to golden brownish.
  9. After frying, place the carnival rosettes on a plate lined with paper towels to remove the excessive fat.
  10. Sprinkle the rosettes with icing sugar.
  11. Place a bit of jam or cherry in the center of each rosette.
