From cakes to bread, there is no short supply of hot baked goods that come out of the Polish ovens. This Delicjowiec cake has a particularly intricate recipe. It requires a lot of preparation before you can even layer it up. The cake layers itself takes a lot of work. That being said, despite the length of time that you have to spend making the Delicjowiec cake, you will find that the actual recipe is very easy to follow. So it really does not matter if you are a pro baker or an amateur one. What matters is how much patience you have. 

You will also find that when it comes to the Delicjowiec cake, the effort put in to make it is totally worth it.

Make The Dough

Part I – Preheat the oven to 340°F (170°C)

Preheating the oven is one of the most important steps when it comes to baking any cake. It ensures that the temperature of the oven is just right. Too hot and the cake will burn. Too cold and the cake will not rise.

Start off this recipe with preheating the oven to 340°F (170°C). This will save you time later because by the time your dough is ready, the oven will be hot.

Part II – Line Two Rectangular Baking Pans

For this recipe, you will need two rectangular 9” x 13” baking pans. Line both the pans with parchment paper. This will help with removing the cakes once they are baked. It also prevents the cakes from burning.

Part III – Beat The Egg Whites

Use 8 egg whites for this part of the recipe. Add a pinch of salt and beat the egg whites till they are stiff. You will know that you have reached the right consistency if you turn the whisk upside down and the egg white remains in a stiff peak. If it doesn’t, whip the egg white some more.

Part IV  – Add Sugar

Add 1 ½ cup of sugar to the mix and beat it till the sugar dissolves. 

Part V – Add Egg Yolks, Flour And Baking Powder

Next add in 3 egg yolks, 1 tbsp. of all purpose flour and 1 tsp of baking powder. Mix it into the mixture. Stir till it combines well.

Part VI – Add Walnuts, Raisins And Shredded Coconut 

Now add in 100 gms. of chopped walnuts (ground walnuts also works), 100 gms. of shredded coconut and 100 gms. of raisins. Slowly mix it into the dough.

Part VII – Divide The Dough Into 2 Pieces

Part VIII – Pour Each Piece Of Dough Into The Baking Pans

Remember the two baking pans that you had lined with parchment paper and kept? Pour the dough into two baking pans. Dividing the dough into two helps ensure that equal amounts are put in each pan.

Part IX – Bake For 35 Minutes

Make The Jelly

Use the instructions on the jelly packet to make the jelly. Note that the instructions change depending on the brand that you use.

Make The Custard

Part I – Prepare The Peaches

Open the can of peaches. Separate the peaches and the syrup. Set the syrup aside and dice the peaches.

Part II – Add Sugar To The Syrup

Add 3 tbsps. of sugar to the syrup from the peach can. Mix it and bring it to a boil.

Part III – Dissolve The Pudding Powders

Use two packets of pudding mix for this step. Open the packets and dissolve the contents with 1 ¼ cup of cold water. 

Part IV – Add Flour And Egg Yolks 

Add in 1 tsp of all purpose flour and 5 egg yolks. Mix it well. Make sure that there are no lumps in the mixture.

Part V – Add The Pudding Mix To The Syrup

When the syrup is boiling, gently add the pudding mix to it. Keep stirring because it will thicken quickly. When the pudding has thickened sufficiently, switch off the stove and set it aside to cool.

Part VI – Beat The Pudding With Butter

Once the pudding has cooled down, add in 300 gms. of butter and beat the mixture till smooth.

Assemble The Cake

Part I – Making The Cake For Adults

If you intend to make the cake for just adults, mix ½ cup of coffee with 1 shot of vodka or distilled spirit. Now dip each Delicja into the mixture before placing them on the cake. 

Part II – Assemble The Cake

Assembling the Delicjowiec should be done in the following order.

1st layer: Cake

2nd layer: Half of the custard

3rd layer: Delicje

4th layer: Half of the custard.

5th layer: Cake

6th layer: Diced peaches

7th layer: Jelly

The Delicjowiec cake is now ready to serve.

Can I Avoid Using Alcohol In The Recipe?

Yes. Strictly speaking the recipe does not require alcohol. Dipping the Delicja in the coffee alcohol mixture should be done only if the cake is meant solely for adult consumption.

What Pudding Mix Do You Recommend Using?

You can use any pudding mix you want for this. Budyń is one of the popular pudding mixes used for this recipe. You can also choose to make your Budyń from scratch instead of using the premix.

Can Delicje Be Made At Home?

Ingredients

Dough

  • 8 egg whites
  • 3 egg yolks

  • 11 oz (300g) of butter
  • 3 tbsps of sugar
  • 1 tsp of all-purpose flour
  • 5 egg yolks
  • 2 packages of the pudding mix (budyń)
  • 1 shot of vodka or distilled spirit (optional)
  • ½ cup of strong coffee (optional)

Others

  • 1 can of peaches in syrup
  • 2 packages of Delicje cakes
  • 1 package of orange jelly mix

Instructions

Make The Dough

  1. Preheat the oven to 340°F (170°C).
  2. Line two rectangular 9 x 13" baking pans with parchment paper.
  3. Beat egg whites with a pinch of salt until stiff.
  4. Add sugar and beat again until sugar dissolves.
  5. Add egg yolks, flour, baking powder, and beat again.
  6. Add walnuts, raisins, shredded coconut, and mix.
  7. Divide the dough into 2 pieces.
  8. Pour each piece of the dough onto the baking pans.
  9. Bake each cake for 35 minutes.

Make The Jelly

  1. Make the jelly following the instruction on the package.

Make The Custard

  1. Open the can with peaches. Pour the syrup into the pot, dice the peaches, and set them aside.
  2. Add 3 tbsps of sugar into the syrup, mix, and bring to a boil.
  3. Dissolve pudding powders with 1 ¼ with cold water.
  4. Add flour, egg yolks, and mix.
  5. When the syrup is boiling, pour the pudding mixture onto it and mix until it gets thick. Allow to cool.
  6. When the pudding is cold, beat it with butter.

Assemble The Cake

  1. If you want to make the cake for adults only, mix coffee with vodka/spirit and deep each Delicja in the mixture before placing them on the cake.
  2. Assemble the cake in the following order:
  • cake
  • half of the custard
  • delicje
  • half of the custard
  • cake
  • diced peaches
  • jelly
