Pickled white onions are a quick and easy recipe. Unlike many of the pickled onion recipes, this recipe ensures that the onions remain crisp and delicious. The taste however is a mix of sweet and sour, just the way we like it. 

You will find that pickled white onions are a favorite in many of the Polish households. Most people love to pair them with herring. The sweet and sour taste complements the fatty texture of the fish so well. It is hands down one of the best combinations that you can use pickled white onions with.

Aside from herrings, you will find that many Poles will eat pickled white onions as a snack too. Others prefer to add it to their sandwiches or salads. The characteristic tangy taste is what adds a punch to any dish you add it to.

Since white onions are easily available and the dish is really quick to make, most Polish households will always keep replenishing their homemade stock. A few buy pickled white onions from the store. This recipe however is much better than the store bought version and easy enough that you will never want to buy the processed one again.

Part I – Peel And Cut Onions

Use 3 large white onions for this recipe. Peel the onions and then cut them into thin rings.

Part II – Mix The Ingredients Together In A Pot And Boil

Add 1 ½ cup of water, ½ cup of vinegar, 1 tsp of salt, ½ tsp of sugar, 3 bay leaves, 6 allspice berries and 15 black pepper balls into a pot. Stir and let the mixture come to a boil.

Part III – Cook For 5 Minutes And Then Add The Onion

Let the mixture boil for approximately 5 minutes. Add the onion and turn off the heat immediately. It is important to turn off the heat immediately because it lets the crunchiness of the onion remain.

Part IV – Leave The Onion In The Hot Mixture For 3-4 Minutes

Make sure to leave the onion in the hot mixture for 3-4 minutes. This is when the onion will absorb the flavor from the mixture. Once this is done, drain the onions. Make sure not to throw away the mixture because we will use it at a later stage in the recipe.

Part V – Rinse The Onion In Cold Water

Now rinse the onion rings in cold water. This step ensures that the crispiness of the onions remains.

After everything has cooled, place the onions in a jar and cover them with the strained vinegar mixture. Keep it in the fridge. It can be kept refrigerated for up to 10 days.
