My opinion may be biased but I truly believed that Polish mazurek cake is one of the best desserts in the world. Easy to make, sweet, and soft, it’s great to eat all year round. However, mazurki cakes are typical for the Polish Easter.

They usually consist of 2 layers: shortcrust base and a sweet upper layer made of nuts and fruits.

My Auntie’s Polish Mazurek Recipe

Ciocia Halinka makes the absolute best mazurek cake in the world.

Every time we have a family gathering, or we simply go visit auntie, we always ask about mazurek. Imagine our disappointment when she says she didn’t make it this time!

The following recipe is VERY easy, so you can do it even if you are a beginner.

It’s definitely a traditional recipe for Polish mazurek, my auntie doesn’t even know where she has it from. She knows it by heart, as she is baking this cake at least once a month.

What Do You Need To Make Polish Mazurek Cake?

The ingredients are quite basic, you can purchase them in any grocery store.

However, try to get organic eggs, as the color of the shortcrust pastry will be more yellowish with the high quality of the eggs.

Mazurek cake can be baked in either round or rectangular tins. Ciocia Halinka prefers the rectangular one- she then cuts mazurek into the small rectangular cakes that you can grab with your hand and eat in one go.

Authentic Polish raisin mazurek recipe.

Ingredience

Shortcrust Pastry (bottom layer)

  • 2 ½ cups of white flour
  • 1 cup of butter or margarine
  • 3 boiled egg yolks rubbed through a strainer or chipped with a fork
  • ¾ cup of the powdered sugar
  • 1 heaped teaspoon of the baking powder
  • 1 vanilla sugar (optional)

Sweet Upper Layer

  • 1 cup of butter or margarine
  • 6 teaspoons of cacao powder
  • 1 šálek cukru
  • 2 ? cups of raisins
  • 1 cup of groud walnuts
  • 6 tbsps of flour
  • 4 vejce

Instrukce

    1. Grease a baking tray with the butter or oil.
    2. Mix all the ingredients for the dough on the pastry board.
    3. Roll out the dough and place it in the 9x13" baking tray. Leave it in the fridge for at least 15 minutes.
    4. Preheat the oven to 400F.
    5. Mix all the ingredients for the sweet upper layer with mixer, blender, or any other food processor.
    6. Put the baking tray into the oven when it's heated and bake for 15 minutes.
    7. Take it off, reduce the temperature to 350F.
    8. Pour the upper layer on the baked dough and bake for 15 minutes.
    9. Turn off the oven and leave the cake inside for at least half and hour.
