Ukrainian-style Polish beet soup is hearty and delicious. It's pretty similar to Polish red borscht or young beet soup. The main difference is that you have beans inside barszcz ukraiński, while the two others are served with boiled potatoes and eggs only.

Ingredients

  • 12 cups of broth or water
  • 5 medium / large beets
  • 2 large potatoes
  • 1 small carrot
  • 1 small parsley root
  • ¼ of savoy cabbage
  • 2 cups of beans / 2 cans of canned beans
  • 4-5 tbsps of white vinegar
  • 4 allspice berries
  • 4 bay leaves
  • salt, pepper
  • sour cream (optional)

Instructions

  1. If you are using dry beans, soak them overnight. If you are using canned beans, skip to the step 2.
  2. Peel and dice the vegetables.
  3. Boil vegetables and beans with allspice berries and bay leaves in broth/water until soft. If you are using canned beans, add them at the end when the rest of the vegetables are soft.
  4. Season with salt, pepper, vinegar and cook for about 5-10 minutes.
  5. Serve solo or with sour cream.
